Pecan and Amaranth Holiday Brittle

I personally find the easiest way to gift during the holidays is to bake something. Making a treat that’s nourishing is also considerate, don’t want to be contributing to any inflammatory woes of my friends and family. This brittle is the perfect way to say you care about someone’s health because it’s choked with wholesome, functional ingredients.

Amaranth is one of the tiniest gluten-free grains out there. Popping it gives it a nice volume to bake with and a toasty flavor. It’s also a complete protein, unlike most grains. You can find it in bulk at a lot of grocery stores and pop it yourself at home quite easily.



  • 3/4 cup popped amaranth
  • 2 tablespoons gluten-free rolled oats
  • 1 tablespoon chia seeds
  • 2/3 cup maple syrup
  • 2/3 cup pecans
  • 1/4 cup coconut oil, melted
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt


Preheat oven to 325°F. Measure all ingredients into a small bowl. Mix until all ingredients are thoroughly combined.

Line a baking tray, pour the mixture out into a fairly even layer.

Bake for 20 minutes, or until edges turn a rich (not burnt) brown. Let cool completely before breaking into pieces using your hands.


Store in an airtight container. If you’re looking to give this brittle as a gift, simply wrap in wax paper and embellish as desired.
